Orange Pound Cake

This makes one 9×5 inch loaf of orange pound cake goodness and it’s bursting with orange flavor.  I’ve always been fond of citrus cakes and love pound cake.  I happened to have some nice oranges around so my wife and me decided to make this orange pound cake.  The result was a delicious citrus flavored pound cake which wasn’t too sweet, yet it popped with that nice buttery flavor that just keeps me coming back for more. Serve and enjoy this orange pound cake with a nice cup of espresso or tea for dessert or treat yourself to a slice for a snack.

Ingredients:

2 cups all purpose flour

1/2 tsp sea salt

1 1/2 tsp baking powder

1 cup sugar

2 tbsp orange zest

1 cream cheese (8 oz. package softened)

3/4 cup unsalted butter (at room temperature)

4 large eggs

2 tsp vanilla extract

Directions:

1. Preheat oven for 325 F degrees and place a rack in the center of the oven.

2. Grease a 9×5 inch baking pan and place a parchment paper lined inside and set aside.

3. In a bowl, sift together flour, baking powder and sea salt, then set aside.

4. Add sugar and orange zest in a bowl. Use back of a spoon to work the zest into the sugar, creating a fragrant and orange flavored sugar.

5. Set orange flavored sugar aside for later.

6. In another bowl, add in the softened butter and cream cheese.

7.Use an electric mixer to cream together the softened butter and cream cheese. Stop the mixer occasionally to scrap down the bowl and make sure the butter and cream cheese is thoroughly mixed.

8. Add in the citrus zest to the butter and cream cheese mixture.

9. Beat on medium until it is smooth and creamy for about 3 minutes.

10. Stop the mixer and scrap down the sides of the bowl.

11. On medium speed, beat one egg at a time, beating for one minute after each addition and beat in vanilla extract.

12. Add all dry ingredients all at once.

13. Use a spatula to fold the batter until it is mixed well.

14. Spoon batter into the prepared loaf pan.

15. Bake for 65-70 minutes. Make sure to rotate once or twice during baking.

16. Take loaf out of oven and let it cool off for 20 minutes before removing pound cake out of the loaf pan. Once you removed the pound cake out of the loaf pan, let it completely cool down and wrap it up in a plastic wrap and serve accordingly.
