Whipped Shortbread Cookies

Who doesn’t enjoy a delicious cookie every now and again?  Especially one that literally melts in your mouth and taste so rich and buttery.  This whipped shortbread cookie is an easy to make recipe that does not require a lot of ingredients. Although, there may not be much to this recipe, do not let it fool you on how the result will turn out.  In this case, less is more.  These whipped shortbread cookies are great for this time of the year and you can jazz them up especially for Christmas time with red and green sprinkles. Ingredients:

1  cup butter (2 sticks 4 oz. or one 8 oz softened at room temp.)

1 1/2 cup all-purpose flour

1/4 cup confectioners’ sugar

1 tsp. vanilla paste

Directions:

1. Preheat oven to 350 degrees.

2. Sift flour into a mixing bowl.

3. In a separate mixing bowl, add butter and confectioners’ sugar in and begin mixing the two ingredients together until they are blended well.

4.Continue mixing and gradually add flour in a little bit at a time.

5. Add in vanilla paste while mixing.

6. Keep on continuing to mix all the ingredients together with a hand mixer for 10-12 minutes or until fluffy and creamed really well.

7. Prepare 2 baking sheets with parchment paper placed on top. This will help to ensure easier cleanup for later.

8. Now use a large glad plastic zip lock bag and put all of the cookie batter in there.  You are going to use this plastic bag as a piping bag to form your cookies.

9. Cut one of the bottom corners of the plastic bag with a small hole.

10.  Squeeze the cookie batter inside the bag and push everything towards the cut corner in preparation of making the cookie.

11. Squeeze the cooking batter onto the cookie sheets.

12. Dip your finger in a bowl of water and gently pat down the down to form cookie shape on each cookie dough.

13. You should be able to do at least 4 cookies in each row.

14. Place the baking sheet with the formed cookie dough batter into the oven for 10-11 minutes or until you see a slight browning on the ridge of the cookies.

15. Remove cookies out of the oven and immediately place them onto a cooling rack.  Repeat steps 11-15 until all of the cookie batter is used.

16. Serve and enjoy cookies with a glass of milk. Enjoy!
