Mango Guacamole Bruschetta

The crunchy French baguette bread or Italian bread serves as the perfect host to the guacamole, which is infused with fresh lime juice, mango, tomatoes, red onion and chopped cilantro. This time my wife and me put a spin on our traditional guacamole by serving it up as the centerpiece in this quick and easy delicious mango guacamole bruschetta recipe.  Happy Cinco de Mayo everyone!

Ingredients:

1/2 loaf French bread or Italian bread

2 tbsp olive oil

2-3 avocados, (chopped)

1/3 cup  red onion  (finely chopped)

1 mango (peeled, pitted, chopped)

1/4 cup cilantro (chopped)

2 tbsp lime juice (fresh squeezed)

1/2 tsp sea salt

1/4 tsp black pepper

1 clove garlic

Directions:

1. Preheat the oven to 400ºF.

2. Slice the French bread on the diagonal into ½” rounds and place on a baking sheet.

3. Toast the sliced bread in the oven for 3 minutes, then flip each piece over and toast an additional 3 minutes.

4. Remove the toasted bread from the oven and immediately rub with the clove of garlic (it works best to first cut a small tip off the garlic clove so that the oils will seep out).

5. Brush the tops of the garlic-rubbed toasts with olive oil and set aside.

6. In a large bowl, combine the chopped mango, avocado, red onion, cilantro, lime juice, salt and pepper.

7. Mash with a fork until half smooth and half chunky. Taste and add more salt and pepper if desired.

8. Use a fork or spoon to put a portion of the mixture onto each of the garlic toasts.

9. Serve and enjoy immediately!

Cook Time: 5 minutes

Total Time: 20 minutes

    These looks really good, The combination with mango sounds delicious. I prefer mashing guacamole with a fork rather than ending up with a semi pure when you put it in a blender. This looks very tempting. GG

    What an interesting combo for bruschetta, I would have never thought of it, but it sounds great! I’ve made a salsa with mango but never a guacamole, I need to try it.
