Baked Classic Kale Chips

My wife loves eating Trader Joe’s zesty nacho kale chips.  She could go through a bag a day every week and that can definitely sting the wallet.  Some bags of kale chips go for over 5 or 6 bucks for a small bag. So today we decided to get some fresh kale and try to bake our own version. It wasn’t Trader Joe’s zesty nacho version but the kale chips was equally as addictive for my wife.  So with that said, I’d say this was a hit.  Making kale chips is easy but just requires that you keep a close eye on them when you are baking them in the oven. You can feel free to use any type of kale you want but I recommend using Lacinato kale since they are fairly flat. I find using Lacinato kale tends to be easier and quicker to do Kale chips with in the oven. The other important key thing is to make sure to dry the kale as much as possible otherwise it will result in soggy kale chips.

Tip – You can use this base recipe and double or trip the amount and use multiple baking pans in the same oven.

Ingredients:

1 bunch kale (remove leaves from stem into bite size pieces)

1 tsp olive oil or coconut oil (spray)

garlic powder (as desired)

pinch of salt

pinch of ground black pepper

Directions:

1. Preheat oven to 250 F degrees.

2. Ensure the rack placement is in the middle of the oven, Not the bottom of the oven.

3. Line baking sheet with parchment paper.

4. Soak the kale in water, rinse and repeat until there is no more dirt.

5. Next, its time to dry the kale. Make sure you get them to be as dry as possible by using a salad spinner.

6. Remove the kale from the salad spinner and pat it down with a paper towel for good measure.

7. Then remove kale from the middle of the stem and tear them into bite size pieces.

8. Put the kale in a bowl and mix in a tsp of olive oil, sea salt, ground black pepper and mix kale until thoroughly.

9. Put kale on baking sheets.

10. Bake in the oven for about 15  minutes or a few minutes longer if necessary, as they shrink to ensure they crisp up real nice.

11.  Remove the kale out from oven.

12. Let kale cool down and enjoy!
