Arugula Strawberry Salad with Lemon Vinaigrette

My wife and I love this simple arugula strawberry salad with lemon vinaigrette especially since we just wanted something light for lunch.  This salad is also wonderful as an appetizer or a side salad to go with whatever is on the grill or main entree dish.  Were going to cherish every moment we can to enjoy eating this salad while the strawberries are still in season. It’s also good with some grilled or pan seared chicken breast on top too!

Ingredients

5 oz. baby arugula (or 1 package)

6 strawberries (sliced)

1/4 cup sliced almonds

4 tablespoons lemon juice

4 tablespoons avocado oil

sea salt (as desired)

ground black pepper (as desired)

Directions:

1. Prepare a layer of arugula greens, strawberries and almonds on plate.

2. Mix together lemon juice, avocado oil, salt and pepper in a small bowl until everything is combined well.

3. Drizzle the lemon vinaigrette dressing over salad greens. Then feel free to finish off with additional salt and fresh ground pepper to taste if needed. Enjoy!
