Arugula Strawberry Salad with Lemon Vinaigrette

Arugula Strawberry Salad with Lemon Vinaigrette

My wife and I love this simple arugula strawberry salad with lemon vinaigrette especially since we just wanted something light for lunch.  This salad is also wonderful as an appetizer or a side salad to go with whatever is on the grill or main entree dish.  Were going to cherish every moment we can to enjoy eating this salad while the strawberries are still in season. It’s also good with some grilled or pan seared chicken breast on top too!

Ingredients

5 oz. baby arugula (or 1 package)

6 strawberries (sliced)

1/4 cup sliced almonds

4 tablespoons lemon juice

4 tablespoons avocado oil

sea salt (as desired)

ground black pepper (as desired)

Throw in either shrimp, steak or chicken to make it a more filling for those who want a little more than greens for a meal :)

LOVELY! I like lemon or any kind of citrus vinaigrette! I can eat double portion because it tastes so refreshing! I made arugula recipe past weekend too. We love arugula (but not kids… :/). I’ll try with strawberries next!
