Pork & Tomato with Soy Bean Sprout Soup

Soups for me are very enjoyable in a variety of ways such as consuming it with noodles, rice, etc.  However, I think soups are often just great on its own without the heavy carbs. When I make soup, the base is usually with pork or chicken bones. However I decided to switch it up a little and make it with pork lion.  The result is a nice all natural pork and tomato with soy bean sprout soup served with some scallions. The flavors of the scallions are not as pungent as other onions, so it really blended very well with this soup.

Ingredients:

1/2 lb. Pork lion (cut into 1 inch cubes)

3 Tomatoes  (cut into quarter pieces)

12 oz. Soy bean sprouts (rinsed and drained)

1 Tofu (soft package)

Green scallion (chopped)

2 Ginger slices (thin cut)

1 tsp sea salt

12 cups water

Directions:

1. Prepare a large pot filled with 6 cups of water and bring to a boil.

2. Once the water comes to a boil, add in the pork lion.

3.Leave pork lion in the pot of boiling water for 2 minutes.

3. Drain the water along with the pork into a colander and set aside for later.

4. Now we can finally start really making the soup!  Prepare a large pot with 12-14 cups of water and bring to a boil.

5. Add in the pork lion.

6. Add in the ginger slices to the water.

7. Add in the tomatoes and soy bean sprouts and once the water is brought to a boil, cover pot with lid and turn down the heat to medium.  Let the soup boil for 1 hour and 30 minutes.

8. Add in the tofu when there is 20 minutes left of the remaining from the 1 hour and 30 minutes.

9. Put 1 tsp of sea salt to the soup and cover lid with 10 minutes remaining from the 1 hour and 30 minutes. Taste soup and feel free to add more salt if needed.  However, bare in mind you are not drinking salt.  This is suppose to be a light and natural soup.

10.  Finally, the soup is ready to be served with some green scallions. Enjoy!
