Lemon Pie Bars

This is a really awesome Lemon Pie Bar recipe that is made with a few simple ingredients and under 1 hour.  We usually make these starting in the spring into the summer.  I remember when my wife first started making these, I was instantly hooked and always look forward to eating these all the time!  Lucky for me, we made these together today but don’t expect these lemon bars to stay around for long.  I’ll probably finish these in a day or so!

Ingredients:

2 1/4 cups all-purpose flour

1/4 cup confectioners’ sugar

1 cup butter (softened)

4 eggs

1 cup organic cane sugar (or 1 1/2 cup if you want sweeter lemon bar filling)

1/2 cup lemon juice

lemon zest (from entire lemon)

Directions:

1. Preheat oven to 350 degrees F.

2. Sift 2 cups of flour and confectioners’ sugar together.

3. Cut and add in butter.

4. Mix well until the dough resembles a pie dough consistency.

5. Press the dough into a 9 x 13 inch baking pan to form a nice crust. (Tip – Also make sure to press the dough about 1/4 inch higher against all across the sides of baking pan to avoid potential lemon filling spilling into a gap)

6. Bake crust dough in the oven for 15-20 minutes or until golden brown. Set aside to cool for 30 minutes.

7. Beat eggs, sugar, 4 tbsp flour, lemon juice and lemon zest for a minute.

8. Pour the mixture over the cooled baked crust.

9. Bake the lemon pie bars for another 20 minutes or until the lemon topping appears set.

10.  Serve Lemon Pie Bars sprinkled with confectioner’s sugar on top when cooled.
