Easy No-Bake Cheesecake

I love a great cheesecake but sometimes I want one without the extra hassle. I just want a nice basic cheesecake that is good on its own or one that can be use as a base to make a different kind of cheesecake.  This easy no bake cheesecake is a no fuss simple to make recipe that can be enjoyed.

Ingredients:

1 pre-made  pie crust

1 cream cheese (8 oz. package)

1 cup heavy whipping cream (8 oz.)

1 tbsp lemon juice

lemon zest (from 1 entire lemon)

1/4 cup organic cane sugar

1 can fruit of your choice for garnish (optional)

Directions:

1. Preheat oven at 350 F degrees.

2. Prepare pie crust by gently toasting the pre-made pie crust in the oven for 350 F degrees for five minutes. Take it out and set aside for later.

3. Whip the heavy whipping cream until it you see it form stiff peaks.  Set aside.

4. In another separate bowl, mix the cream cheese, sugar and lemon juice with a mixer until it is fluffy.

5. Add the whipped cream back to the cream cheese mixture and add in the lemon zest.

6. Mix with mixer until the whole thing is combined to be nice and smooth (takes a few minutes to get all the lumps out).

7. Put the cream cheese mixture into a pre-made  crust.

8. Chill cheesecake in the refrigerator for at least 4 hours before cutting a slice to serve.
