Simple Good Blueberry Pancakes

Pancakes can stand well on its own without anything in it.  However adding in your favorite ingredients will take it to another level.  Now this could be chocolate chips, nuts or whatever your heart desires.  This weekend I originally planning on making a yogurt parfait with blue berries but ultimately took a detour and made pancakes with blue berries. If you’re into berries, give these a try and I assure you wont regret it.

Ingredients:

1 cup Pamela’s Baking and Pancake Mix (Gluten free)

1 egg

3/4 cup almond milk

1/2 cup blueberries

Directions:

1. Mix all ingredients together until there are no lumps.

2. The batter should not be too thin or too thick.

3. Pour 1/4 cup batter onto a pre-heated, lightly oiled griddle or pan. Flip once and serve immediately with your desired condiments.

4. Instead of adding the blueberries into the pancake batter (nothing wrong with this method) I prefer to add it in manually to preserve the blueberries from breaking apart too much.  However you could feel free to mix the blue berries into the pan cake batter ahead of time (no wrong way to do this).

4. Serve this with some blueberries and don’t forget to have the maple syrup along with the butter on the side.  Enjoy!
