Prime Filet Mignon with Red Wine Sauce

It’s Christmas day and planned on making beef for dinner. Not just any beef though, but Prime cut Filet Mignon.  We have the privilege to get our hands on a steak and seafood package that came with Chilean Sea Bass and Prime Filet Mignon courtesy of Certified Steak & Seafood company. The prime filet mignon turned out to be a very nice extra tender cut.  When you have a special quality prime cut of beef, you really don’t need to add too much crazy amounts of seasoning because it will taste great on the merit of its own high quality.  The red wine sauce really compliments the filet mignon by bringing out the beef flavor instead of covering it up.  I recommend those who are interested in excellent prime filet mignon along with other beef and seafood to check out Certified Steak & Seafood Company and treat yourself to a nice steak of fish.

Ingredients:

2 prime filet mignon

4 tbsp olive oil

6 tbsp butter (unsalted)

sea salt (as desired)

ground black pepper (as desired)

1 white onion (thinly sliced)

2 garlic cloves (minced)

1 tsp dried oregano

1/4 cup tomato paste

2 1/2 cup red wine (Cabernet)

Directions:

1. Preheat oven at 425 F degrees.

2. Preheat grill pan over medium-high heat.

3. Sprinkle sea salt and ground black pepper.

4. Sear the filet mignon to about 3 minutes each side or until desired doneness.

5. Transfer filet mignon to the oven for about 8 minutes.

6. Take filet mignon out of the oven and cover with lid. Set aside for later.

7. In a skillet or sauce pan, melt 2 tbsp of butter.

8. Add in onions and let it saute for until it is nice and tender (about 5 minutes).

9. Season with sea salt, add in garlic, oregano. Stir for about a half a minute.

10. Add in 1/4 cup tomato paste and cook for 2 minutes while stirring constantly.

11. Add and whisk in red wine wine and let it simmer for until it reduced by half the amount (about 10 minutes).

12. Remove pan from stove. Remove as much solids as possible from sauce by using a strainer to strain it into a bowl.

13.  Add the sauce back into the pan and bring it to a slow simmer.

14. Cut and add in 4 tbsp of butter and slowly whisk butter into the sauce a little at a time. Season the sauce with salt and pepper as needed.

15. Prepare filet mignon on a serving plate and drizzle it with the red wine sauce.  Serve with a nice glass of red wine and enjoy!
