Satay Beef Fried Rice

I was in the mood today for one of my many favorite comfort foods on a typical Sunday afternoon.  Watched my Knicks game and made some satay beef fried rice.  I usually make fried rice using overnight left over rice and suggest that you do the same as well because it will turn the grains firm and get rid of the excess moisture. The rice will also be much easier to separate too. If you cook with fresh made rice, the outcome will likely result in fried mush instead of fried rice.  So with that said lets get right to it.  I made plenty of fried rice before but I have to admit this is my first time doing fried rice with beef ever.  It came out real nice and flavorful. One key thing to keep in mind when doing this fried rice or any fried rice is to make sure your wok is nice and hot by keeping the heat turned up to the max.

Ingredients:

1 lb ground beef

4 servings left over rice

1/2 white onion

1 garlic clove

2 scallions

1 tbsp Sriracha hot sauce

2 tbsp oyster sauce

1.5 tbsp soy sauce

2 tbsp satay sauce

2 tbsp mushroom sauce (optional)

small handful cilantro

4 tbsp olive oil

1 egg (scrambled)

Directions:

1. Prepare a wok by turning up the heat to high.

2. Once wok is really hot, add in 2 tbsp olive oil.

3. Put in the ground beef and cook it through until beef is brown. Set aside on plate for later.

4. In the same wok, add in the diced onions and sautee them until they come translucent.  Set aside on plate for later.

5. Clean wok and add in 2 tbsp olive oil and add in 2 tbsp of satay sauce. Let the oil cook the satay sauce for about 5 seconds.

6. Then add in the ground beef set aside from earlier.

7. Stir beef thoroughly to mix with the satay sauce.

8. Combine rice with beef and stir thoroughly until beef is mixed well with rice.

9. Add in minced garlic to the rice.

10. Add in onions.

11. Mix onions thoroughly until it is mixed well with rice.

12. Add in oyster sauce, soy sauce, Srirachi hot sauce and mushroom sauce. Mix rice thoroughly.

13. At this point, add in scrambled eggs on top of the rice.

14. Immediately mix eggs with rice thoroughly until eggs are cooked.

15. Sprinkle in cilantro and scallions and mix it with rice for about another final minute.

 

16.  Now finally the beef fried rice is ready to be served.
