Mashed Cauliflower

Cauliflower is one of those versatile vegetables that you can easily turn into a quick simple dish.  Mashed cauliflower is what I decided to make for this year’s Thanksgiving holiday as a side dish to compliment our turkey.  My wife has been diagnosed with candida and has been instructed to essentially eat meat and vegetables with little to no carbs or sugar and sweeteners as possible. Since my wife has been eating plenty of steamed cauliflower as of late because it is known to be low carb and low starch, I decided to make her a mashed cauliflower (aka mashed potato alternative).  The result came out close enough to pass as a great alternative for those who cant have mash potatoes but wants it anyway.  I made this similarly to how I normally do mash potatoes as far as using salt, pepper, sour cream and butter.  However you can feel free to add more to your mashed cauliflower such as bacon bits or shredded cheese or whatever your heart desires.

Ingredients:

1 cauliflower

2 tbsp butter

4 tbsp milk or half & half cream

2 tbsp sour cream

sea salt (as desired)

black ground pepper (as desired)

chives (chopped) – optional

Direction:

1. Wash cauliflower thoroughly and cut off the stems and leaves on the bottom.  Then cut the cauliflower into small florets.

2. Bring 1 cup of water to a boil in a pot. Once water is boiling, add in the cauliflower.  Cover with lid and turn heat to medium and let the cauliflower cooking in the boiling water for up to 20 minutes or until it is nicely soft and tender.

3. Drain cauliflower and try your best to get it dry because it will result in a better outcome.

4. Put cauliflower in a bowl and mix in sea salt, ground black pepper, butter, milk, sour cream and chives.

5. Mix cauliflower thoroughly and it is ready to serve. Enjoy!
