Korean Spinach side dish (sigeumchi namul)

Vegetarian or not, this is a very simple yet tasty Korean side dish you can make and serve with rice as well.  The technique used to make  this dish results in a fast, fresh and simple recipe courtesy of Maangchi.  The delicate balance of flavor isn’t too salty so you can eat this by itself as well but I personally would prefer to eat it with rice.  Hopefully you will enjoy this as much as we did. One last thing, I recommend using fresh spinach instead of frozen spinach for a much better overall result in texture and taste.

Ingredients:

1 bunch fresh spinach

2 garlic cloves (finely minced)

1 green onion (chopped)

1 1/2 tbsp soy sauce (gluten free)

1 tbsp sesame oil

sesame seeds (as desired)

Directions:

1. Bring water to a boil in steep pot or deep dish wok  after cutting off root of spinach and removal of any bad leaves.

2. Boil the spinach for 30 seconds.

3. Drain spinach, then rinse with cold water 3 times.

4. Then squeeze the water out of the spinach with your hands.

5. Combine together in a large bowl, minced garlic, soy sauce, sesame oil and green onion. Mix them up together with a spoon.

6. Place the spinach into the bowl and thoroughly mix everything with a spoon or by hand.

7. Finally, transfer the spinach onto a serving bowl or plate and sprinkle some sesame seeds on top of the spinach and you are ready to enjoy this delicious side dish!
