Baked Stuffed Turkey Breast

I can’t believe how quickly this year has gone by. Thanksgiving is already here and this year we are heading over to relatives for dinner, however due my my wife’s candida diet, we are making dinner together for her to eat since we didn’t want to put the burden on our relatives to cater to.   So we came up with a nice simple paleo friendly turkey dinner. This is good for up to 4 servings and since it’s just the two of us, this turkey will serve us just fine. We had our turkey with mashed cauliflower and oven roasted jicama which complimented fairly well with out turkey.

Ingredients:

2 lb turkey breast

1.5 oz pancetta

5 celery sticks

2 carrots

1/2 white onion

1/2 oz. dried mushrooms (mixed)

sea salt (as desired)

ground black pepper (as desired)

garlic and herb butter (or mix your favorite fresh herbs with butter)

3 garlic cloves (minced)

twine rope

Directions:

1. In a bowl, place dried mushroom and cover with hot water for about 10- 15 minutes.  This should be enough time for it to re-hydrate.

2. Put in celery, carrots, onion,mushrooms, garlic cloves together in a food processor and pulse until it turns into a nice paste.

3. Chop up pancetta into little pieces.

4. Slowly cook pancetta in a pan until crispy over medium heat.

5. Then add in stuffing back into the pan with pancetta.  Stir for a minute and set aside for later.  This will be your stuffing for the turkey breast.

6. Remove skin off turkey breast and save for later.

7. Put turkey breast between two pieces of transparent plastic wrap and pound it with a meat tenderizer until turkey is around 1/2 inch or less thick. ( feel free to butter fly the turkey breast if you need to)

8. Spread the turkey stuffing made from earlier on top of the turkey breast and leave about 3/4 inch of space around the edges of the turkey.

9. Roll up the turkey breast tightly with skin back on and tie it up with some twine rope. Then place the turkey in a greased roasting pan and put in the preheated oven at 400 degrees for 20 minutes.  Then turn down the heat to 325 degrees and bake for another 20 minutes.  Once that is done, check it with a meat thermometer and the internal temperature of the turkey breast has to be 155 F(if not, then bake for another 10 minutes at 325 degrees then check temp again).   Turn on the broiler and place turkey underneath until the skin is nice and golden brown.

10. Turkey is ready to be served with some gravy and some nice side dishes of your choice.  Enjoy and have a Happy Thanksgiving everyone!
