Baked Egg Plant with Meat Sauce (Clean our Fridge edition)

Today was basically our clean out our refrigerator day. So given what little we had left, we decided to make baked egg plant with some ricotta cheese along with some meat sauce and mozzarella cheese. It wasn’t our normal way of making baked egg plant but it definitely came out pretty good. The 2 pounds of meat a bit much for us so we separated half and made some meatballs out of it and put those in the freezer for another day. It definitely felt great to make this with our left over things in the fridge and still manage to keep this meal light and on the health side since I didn’t fry the egg plant.

Ingredients:

1 eggplant (thin cut slices)

1/2 package frozen spinach

1-2 lbs ground beef or meatloaf mix

sea salt (as desired)

garlic powder (as desired)

ground black pepper (as desired)

1 pinch of parsley (finely chopped)

1 cup ricotta cheese

mozzarella cheese (as desired)

1 1/2 cup tomato sauce (any desire brand of choice)

Directions:

1. Preheat oven and turn on the broiler.

2. Cut up egg plant into thin slices.

3. Grease cookie sheet with oil and put the sliced egg plant on the cookie sheet. Sprinkle olive oil, ground black pepper, garlic powder and sea salt on each side of egg plant.

4. In a small pot, boil up water and cook frozen spinach according to package directions. Then drain, squeeze as much water out of the spinach as possible and set aside for later use.

5. Put the cookie sheet with egg plant in the oven 4 inches underneath the boiler for around 4-5 minutes each side or until it turns light brown on each side.

5. Take egg plant out of the oven and let it cool down for a 5- 10 minutes.

6. Mix a pinch of ground black pepper, sea salt, garlic powder and parsley into ground meat.

7. In a pan, turn up heat. When it is nice and hot, add in about 2 tbsp olive oil to the pan.

8. Add in the ground meat and brown meat.

9. Then add in 1 and 1/2 cup of tomato sauce into the pan along with the ground meat. Once the tomato sauce starts to bubble, turn off stove and set aside for later.

10. In a bowl, add 1 cup of ricotta cheese, mix half package of cooked frozen spinach and mix until everything is thoroughly combined together.

11. Preheat oven for 350 degrees.

12. In a 8×8 casserole dish, grease the bottom and then add in a layer of meat sauce.

13. Add in a layer of egg plant.

14. Add in a layer of ricotta cheese on top of egg plant.

15. Add in layer of meat sauce.

16. Add in a final layer of egg plant.

17. Then drizzle on another nice layer of ricotta cheese and meat sauce on top.

18. Cover casserole dish with aluminum foil.

19. Put the casserole dish in the oven with the aluminum foil on and let it bake for 30 minutes.

20. Take casserole dish out and remove aluminum foil. Then sprinkle as much mozzarella cheese as you desire.

21. Turn the broiler on and pop the casserole dish back underneath the broiler until the mozzarella cheese is melted or nice and brown.

22. Remove from the oven and it’s ready to serve immediately. Enjoy with your choice of bread or pasta on the side.
