Asian Peanut Noodle Salad

We are making baked lemongrass chicken wings for dinner and I thought I will make a noodle dish to pair it with. So I came up with this Asian peanut noodle salad and see how it turns out. It was great with the wings and I am sure you will like it too if you are into peanuts.

Ingredients:

1 medium size carrot (peeled, julienne)

1/2 cucumber or 2 small cucumbers( julienne)

1/2 cup peanut butter

1 tbsp sirachi chili sauce (optional)

1 lime (zested & juiced)

1/4 tsp sea salt

2 1/2 tbsp sesame oil

1 tbsp brown rice wine vinegar or rice wine vinegar

3 tbsp gluten free soy sauce

2 tbsp blue agave (or honey)

1 tbsp ginger (roughly chopped)

2 cloves garlic (roughly chopped)

1/4 cup cilantro (roughly chopped)

2 green scallions (diced)

1/4 cup of water( this really depends,you should add it slowly to adjust the desired smoothness of the sauce)

1 package of desired pasta

Directions:

1. Bring water to boil and follow directions for cooking the pasta of your choice. I went with a gluten free spaghetti pasta.

2. Place all ingredients in with the exception of carrots and cucumber in a food processor or blender.

3. Mix until everything is nice and smooth.

4. Now you have dressing that is ready to be served immediately or can be stored in the refrigerator for later.

5. Combine Thai peanut dressing along with carrots, cucumber with pasta until mixed well.

6. Garnish with little bit of cilantro and its perfect for serving. Enjoy!
