Simple Mango Frozen Yogurt

The weather is finally starting to warm up again.  When the kids want ice cream or a frozen dessert, you can make this really quick delicious mango frozen yogurt which is an adapted version of Jamie Oliver’s mango frozen yogurt. It’s also gluten free as well and refreshing because all the ingredients are natural.  The result is an awesome treat that is not too sweet or tart and will keep you and the kids nice and cool.

Ingredients:  (Recipe makes 1 quart of mango frozen yogurt)

1 and 2/3 cup plain yogurt (it can be Greek or any style you prefer)

3 – 5 tbsp honey (it depends on how sweet or tangy desired)

1 lime (just need the zest)

24 oz frozen mango chunks

2 – 3 fresh mint leaves

Directions:

1. It is highly recommended that you use a quality food processor to make this.  So first add in the frozen mango into the food processor.

2. Blend the frozen mango until it is chopped up in very fine pieces but not smooth.

3. Now add in the yogurt, lime zest, mint leaves and honey into the into the food processor.

4. Continue to blend until you get a nice smooth consistency.

5. Now you can taste to see if is to your liking.  At this point it may be on the tart and tangy side but you can always add more honey or optionally put in some blue agave sweetener to make it sweeter. Put the frozen mango yogurt in a container and keep it in the freezer for at least 1 to 2 hours before serving (however if you can’t wait, you can eat it immediately).

6. Finally you are ready to serve this delicious frozen treat. Enjoy!
