Gluten Free Oatmeal Raspberry Squares

This recipe was first discover in one of my favorite cookbook the Family Meals by Williams-Sonoma. Then I search around and found another version of the recipe which is by The Gourmet Housewife. The two is very similar , but I chose the one from The Gourmet Housewife since it is a smaller portion. I mange to use my gluten free flour blend by King Arthur for the first time to replace the AP flour. I was happy with the outcome of the jammy bars. I am sure if you make it with AP flour, it will be great too.

Ingredients:

1/4 cup Organic Brown Sugar(original recipe ask for 1/2 cup)

1 cup Gluten Free flour

1/4 tsp Baking Soda

1/8 tsp Sea Salt

1 cup Gluten free Rolled Oats

1/4 cup Crushed or Chopped Walnuts

1/2 cup Organic Butter, softened

3/4 cup Raspberry jam (or any desired flavor jam)

Directions:

1. Preheat oven to 350°F.

2. Grease one 8 inch square pan with aluminum foil.

3. Combine brown sugar, gluten free flour, baking soda, salt, gluten free rolled oats and chopped walnuts in a bowl.

4. Rub in the butter using your hands to form a crumbly mixture.

5.  Press 2 cups of the mixture into the bottom of the prepared pan.

6. Spread the jam to within 1/4 inch of the edge.

7. Sprinkle the remaining crumb mixture over the top.

8.  Bake for 35 minutes in the preheated oven, or until lightly browned. Take out of the oven and  allow at least 1hr for it to set and cool before serving.

9. This is great for eating by itself for you or your kids.  Try serving this up with your favorite hot or cold drink.  Yum!
