Asian Style Spicy Vermicelli Salad

This recipe was from my mommy back in the days when our family owned a deli. This was one of our best selling item during summer time. Some people would order a whole tray of it for office party or some would even want us to put it on a wrap.   I thought I would share it with you all, since it is great to have salad on a hot summer day. Try this out for your up coming Memorial day BBQ as a side dish, I am sure you will enjoy it as much as we did.

Ingredients:

1 tsp red pepper flakes

1 tsp sesame oil

2 tsp fish sauce

1 tsp sea salt

1/2 tsp cane sugar

1/2 tsp chicken broth powder (optional)

1 lime (juiced)

1/2 tsp coconut aminos or gluten free soy sauce

8 oz Vermicelli

1/2  carrot (medium sized, shredded)

1 1/2 stock of celery (minced)

1 tbsp cilantro (minced)

1 1/2 cooked chicken breast (shredded)

Directions:

1. Combine the red pepper flakes, sesame oil, fish sauce, sea salt, cane sugar, lime juice, coconut aminos (or soy sauce) in a bowl.

2. Mix the red pepper flakes, sesame oil, fish sauce, sea salt, cane sugar, lime juice, coconut aminos (or soy sauce) in a bowl.

3. Combine the chicken, celery, cilantro and shredded carrots with the vermicelli into a large bowl.

4. Pour in the mixture made earlier into the large bowl.

5. Mix the vermicelli thoroughly until the sauce mixture blended well with everything.

6. Now its ready to serve as a stand alone dish or in a tomato wrap.  Enjoy!
