Chinese Melon (聖瓜) corn and carrot Pork Soup

I usually make soup every week and this week we are doing a light and hearty soup to compliment our meal for later.  I love drinking soup of all kinds but if I am looking for something that is made with all fresh and natural ingredients, there is really no better alternative than making it yourself.

Ingredients:

3 Corn

2 Large carrots

1 lb. Pork sirlion cutlet

2 Chinese melon 聖瓜

3 Dried Figs

2 tsp Sea Salt or to desired taste

Directions:

1. Remove and peel off skin from carrots, Chinese melon (聖瓜) and cut into small sliced pieces. Also remove the corn husk from corn and  set all vegetables on the side for now.

2. Take 1 pound of pork and blanch the pork and oil out of the meat by boiling it in a pot full of water for 5 minutes.

3. Drain the pork and set aside.

4. Prepare a pot with 10 cups of water.

5. Add in pork to the pot of water.

6. Add in all the corn, carrots, Chinese melon( 聖瓜) and dry figs.

7. When the water reaches the boiling point,let the soup boil on high heat for 20 minutes before turning down heat to medium low for another 1 hour.

8.  Now the soup is ready for serving!
