Spicy Sesame Chicken Drumsticks

Just finished shopping from Wholefoods Market today and bought a whole bunch of things along with some on sale chicken drumsticks.  Since we had nothing defrosted out from the freezer for tonight, I took out some drumsticks from the package  I just purchased and decided to make this for tonight. I hope you will enjoy it as much as my husband and I did. The key to this recipe is to ensure that you allow proper timing for the drumsticks to marinate.  I’m aware some people may be in a rush to do it fast but I can you ensure its worth the wait!

Ingredients:

5-6 Chicken drumsticks

4 tbsp Coconut Aminos

1/2 tsp Sea salt

1/2 tsp Black pepper

1 – 2 tsp Sriracha hot sauce

2 tsp Sesame oil

1 Green scallion (optional for garnish)

Directions:

1. Wash and pat dry chicken drumsticks with paper towel.  Then make 2-3 slits to the each chicken drumsticks with a knife.  This will help greatly enhance the marination of the meat when we prepare and use a wet rub marination later.

2.  In a small bowl, mix together thoroughly black pepper, sriracha hot sauce, sesame oil, sea salt and coconut aminos for marination.

3.  Drizzle prepared marination on the chicken drumsticks and use your hands to rub all the marination until chicken completely is covered. Put the chicken in the refrigerator for 2 to 4 hours.

4.  Preheat oven for 350 degrees.  Take the chicken drumsticks out of the refrigerator and bake for 40-45 minutes until the center of the thickest part of the chicken is 180 degrees.

5.  Take chicken out of the oven and sprinkle some toasted sesame on top and its ready to be served. Enjoy
