Pan Seared Salmon with Black Bean Sauce

Happy new year everyone! Me and my husband had a rare opportunity to relax and took most of the day and did absolutely nothing except rest.  I was in the mood for seafood today and wanted something quick and easy for dinner.  So I whipped up this simple yet delicious salmon that is good to serve for 2 with rice and a side of your desired vegetables.  I hope you all enjoy this as much as me and my husband did.

Ingredients:

4 pieces of Salmon

1 1/2 tbsp Black Bean Sauce

1/3 cup of Water

1 green scallion (chopped)

Directions:

1.  Preheat pan or wok with about 2 to 3 tbsp of oil.

2. Gently place the salmon in the pan or wok when oil is hot.

3.  Sear the salmon until golden brown on each side. The time will vary depending on the thickness of the piece of salmon so it could be roughly between 3-4 minutes per side or possibly longer.

4.  Set the salmon aside on a plate with paper towel to absorb the excess oil off the salmon.

5.  Clean the pan or wok and add in 2 tbsp of oil.  When oil gets hot stir in the 1 1/2 tbsp of black bean sauce and stir it up until the paste breaks up a little bit (less then 1 minute).

6. Add 1/3 cup of water to mix with the black bean sauce and stir until it turns into a nice consistent sauce.

7. Once this is done, you are ready to set up a plate with the salmon and drizzle the black bean sauce on top with some green scallions on top to garnish the salmon.  Serve and enjoy!
