Ground Turkey with Potato and Peas

This is a slightly modified version of Skinny Gina’s ground turkey potato and spring peas recipe.  Not only is this a very delicious meal but it is extremely quick and easy to do (well under an hour even with all the extra time I used taking photos) plus it’s also a very colorful vibrant looking dish.  Kudos to Gina for sharing this great dish for foodies out there that want to enjoy a great tasting meal and something on the leaner side.  We personally love this dish and recommend giving this recipe a try.

Ingredients:

1 medium tomato

3 cloves garlic

1/4 cup fresh cilantro

10 -15 oz  ground turkey

2 medium scallions, chopped

1/2 cup frozen peas

1 potato, peeled and diced into 1 inch cubes

8 oz can tomato sauce

3/4 cup water

1/2 tsp cumin, or to taste

1/2 tsp sea salt, to taste

1 bay leaf

Directions:

1. Chop by hand  tomato, garlic and cilantro and mix it all together in a bowl.
2. In a large skillet, brown turkey and season with cumin and sea salt to taste.
3. When meat is browned and cooked through add scallions, chopped tomato mixture, peas, potato, tomato sauce, water, cumin, salt and bay leaf.
4. Cover and simmer over medium-low heat until potatoes are cooked through, about 25 minutes stirring occasionally. Add more water if needed. Remove bay leaf and serve over rice.
