Savory Angus Beef Rice Noodle Soup

Today was a relatively cool day outside and we haven’t quite turned up the heat yet because the weather here has a mind of its own. Temperature has been going up and down like the Dow Jones.  On cooler days such as today, my cravings for a nice bowl of soup and noodles is my comfort food.  So today I made some beef noodle soup for dinner and kept it gluten free for the wifey.  I wasn’t sure if she would enjoy it or not but when she had that first bite, I got the nod of approval from her so I’ll definitely be making this again.

Ingredients:

1 lb Black Angus pepper steak beef (cut into small bite size)

1 Package of Vietnamese rice noodles or pho

3 tsp Better Bellulion Beef stock

1 Onion (yellow or white)

3 tsp Coconut Aminos (or soy sauce)

1 tbsp Sesame chili oil

Himalayan salt or sea salt (as desired)

1/2 tsp 5 spice powder

1 tsp Nanami Togarashi assorted chili pepper

5 Green scallions

Cilantro bunch

Directions:

1. Marinate the beef with coconut aminos, sesame chili oil, salt, 5 spice power and Nanami Togarashi assorted chili pepper.

2. Chop onions into thin breakable slices then mince cilantro, green onions and set aside for later use.

3.  Bring a pot or deep wok with water to a boil.  Cook the rice noodle as per directions on package then drain and rinse with cold water to rinse off the starch.

4. Next were going to caramelize the onions we chopped up earlier.  Stir and let the onions cook until you see it turn to a brown color and nicely caramelized.  Set onions aside.

5.  In the same wok, add some oil and add in the marinated beef from earlier.  Let the beef cook until it is browned.

6.  Now were going to prepare the soup.  Add in a pot or deep wok about 3-4 bowls of water and put in 3 teaspoons of the beef stock into the water. Let the water come to a boil.

7.  Once the water comes to a boil, stir in the caramelized onions into the soup.

8.  Add in the stir fried beef from earlier into the soup as well. Let it cook for about a minute or so.

9.  The soup is basically done at this point.  It is recommended that you taste the soup and add salt if needed.  If not, proceed to add in the rice noodle into the soup and let it sit in the soup for about a minute.

10.  Get yourself a nice size bowl and put the noodles in the bowl along with the beef and onions.  Then top off the noodles by sprinkling some green onions and cilantro.  Finally add some soup and you got yourself a nice hot savory delicious bowl of noodle soup.  Enjoy!

    Mmm, on a cold night, there is nothing better than a big bowl of this. It is SO satisfying and just warms you up from the inside out. 😉
