Pamela’s Gluten-Free Pancake and Baking Mix

Recently, my wife has been diagnosed with Hashimoto disease.  Although we felt like we have been eating healthy, she will now be transitioning towards a gluten-free, soy-free diet.  It’s been one week and she is noticing less bloating then before compared to when she was on a whole wheat diet.

It’s been an adventure for us together since we are really starting to get familiar with the world of gluten-free.  It’s a whole new ball game but it some ways its not as bad as we thought it would be.  Our biggest concern was that we would have trouble finding items to fill the void of pasta, breads and snacks.  To our surprise, all of those things have been addressed thanks to places like Whole Food Markets, Wild by Nature and Trader Joe.

One of the things my wife loves to eat are pancakes so it was one of my priorities to find something decent that is gluten-free.  Thanks to a friend of mine, I have been recommended to look for some gluten-free products.  One of them happens to be Pamela’s gluten-free pancake and baking mix.   I found this at Whole Food Markets and Wild by Nature ranging between $5 or $6 which is a noticeable difference in price compared to regular pancake mix.  But there is an old saying, you get what you pay for.

There are easy to follow directions on the package but we tweaked it a little bit.

Ingredients:

1 cup Pamela’s Mix

1 egg

3/4 cup almond milk

1 tbsp extra virgin olive oil

Directions:

1. Mix all ingredients together until there are no lumps.

2. The batter should not be too thin or too thick.

3. Pour 1/4 cup batter onto a pre-heated, lightly oiled griddle or pan. Flip once and serve immediately with your desired condiments.

4. Just looking at this makes me ready for another round of pancakes.

My wife and me were both skeptical at first about how the pancakes would taste along with the texture.  Pamela’s Gluten-Free pancake and baking mix was love at first bite for us.  The pancakes were so soft, fluffy and taste really awesome.  It easily one of the best pancakes from a package we have had hands down.  So for those are looking for a quality pancake and baking mix, we highly recommend Pamela’s pancake and baking mix because you not only can make some wonderful delicious pancakes but you can also make waffles, crepes, muffins, cookies and more! Bottom line is Pamela’s mix is fast, easy and delicious.
