Greek Style Baked Chicken Breast

This chicken recipe is very juicy, delicious and easy to make.   My wife and I were in the mood for chicken and decided to make this since we had unused lemon left from making lemonade.  This chicken dish takes roughly about an hour to do with all the prep work and cook time and perfect for serving two.

Ingredients:

2 Chicken breasts (skin on bone in)

1 Lemon

2 tbsp Greek seasoning (use your favorite brand or mix your own by adding  Greek oregano, onion powder, garlic powder, dried red pepper flakes)

1 tbsp Sea salt

1 tbsp Garlic granulated powder

1 tsp Black pepper

1 tbsp Olive oil

Directions:

1. Cut up one lemon in half and reserve 4 thin slices of lemon set aside for later to use.

2. Clean and pad dry the 2 pieces of chicken breasts.

3. Marinate the chicken breast with Greek Seasoning, sea salt, garlic powder, black pepper and add olive oil on skin.

4. Prepare baking tray with aluminum foil and grease it with some olive oil or any cooking oil spray and make sure you preheat conventional oven at 350 degrees.

5. Place marinated chicken on to the prepared baking tray and take the prepared lemon and squeeze juice on top of the chicken breasts.

6.  Then placed the 2 reserved lemon slices beneath each chicken breast.

7. Now we are ready to placed the chicken breast in the oven for 30-40 minutes or until chicken juice runs clear.  During the last 5 minutes, put oven setting to broil to brown the skin of chicken nicely and give it a more appealing finishing look.

8.  Finally it’s ready to be served with your favorite side of vegetables and grains or pasta.

We served ours with some 7 multi grain rice pilaf with a side of zucchini and it complimented the dish nicely! We hope you enjoy this as much as we did.
