Breakfast of Champions Sandwich

I love making and eating breakfast in the morning especially on the weekend.   Anyone who knows me well can tell that I am not a morning person at all.  Although I’m working on it.  My wife saw an egg sandwich made with whole wheat baguette and it looked delicious.  Since we bought a whole wheat baguette from Whole Foods, she decided to make a breakfast sandwich with the ingredients we had available at home and it turned out really nice.  I would prefer eating this sandwich over a greasy deli egg sandwich.

Ingredients:

Whole wheat baguette (cut into 4 inches per sandwich)

1 tbsp Smart Balance or any organic  butter

2 Organic eggs

2 Thin sliced of low sodium ham (optional)

2 Strips of Morning Star veggie bacon

3 Thin sliced tomatos

Horizon Organic shredded white cheddar cheese (add to your desire)

Himalayan Salt or Sea salt (add to your desire)

Fresh Ground Pepper (add to your desire)

Directions:

Note: preheat conventional oven for toasting

1. Cut the whole wheat baguette into 4 inches per sandwich and spread 1 tbsp of smart balance butter onto both sides of the baguette.  Then put it in the oven to toast for 5-8 minutes (depends on how toasted you want it).

2. Microwave the strips of Morning Star veggie bacon in the microwave as per package instructions.

3. Fry eggs sunny side up or over easy. While eggs are cooking, add in some Himalayan salt and some fresh ground pepper on top.

4. By now the baguette should be ready to take out of the oven. Now we can begin to assemble to sandwich by combining the eggs, veggie bacon, tomato (with a sprinkle of salt and fresh ground pepper) and white cheddar cheese.

5. Finally we put the assembled sandwich back into the conventional oven and toast it for about 5 minutes or until cheese melts and you’re good to go!
