Chinese pork tomato cucumber soup

Usually our family makes this soup when we do not have much of an appetite to eat. So this soup is really good for serving as a meal and for opening up your appetite. Best of all, its really light and easy to make.

Ingredients:

8-10 cups water

3 cucumbers

3 tomato

1.5-2 lbs pork sirloin

2 packages preserved mustard greens

1 tbsp Knorr chicken powder stock

Directions:

Note: Prepare in advance water into pot and bring to a boil.

1. Peel skin and cut cucumber along with the tomato.  Then slice pork sirloin into thin diagonal slices and marinate with a 1/2 tsp of salt and a 1/2 tsp of canola oil.

2. Add in the pork, tomato, cucumbers and preserved mustard greens into the pot of water. Then add 1 tbsp of chicken powder stock into the soup.  Let the soup boil for 30 minutes (or when the cucumber looks soft) and stir occasionally.

3. Once the soup is done cooking, if it isn’t salty enough, feel free to add salt to taste and you can serve with rice or by itself. Enjoy!
