Stir fried Beef with Bitter Melon

This is a very nutritious recipe as bitter melon contains various kinds of vitamins and antioxidants. It is also a popular Chinese dish in Asia and easy to make. This dish can truly be a satisfying dish for your stomach.  However, for some it may be an acquired taste.  Either way, If you tried this dish I would love to hear your thoughts on this dish.

Ingredients:

1 lb London broil beef

2 Bitter melon

1 Ginger sliced thin

4 Cloves of Garlic chopped

3 tsp Dark soy sauce

2 tsp corn starch

1/4 tbsp Sea salt

1/2 tsp Organic cane juice (sugar)

1/2 tsp White pepper

1 1/2 tsp fermented Black bean

Directions:

1. Soak the black beans first in water first  and dry off.

2. Slice the bitter melon in half lengthwise. Scoop out the seeds, then cut bitter melon into thin quarter-inch slices. Throw into boiling water and boil for 2 to 3 minutes.

3. Thinly slice the beef against the grain. Combine the  1 tsp cornstarch, soy sauce, salt and sugar in a small bowl. Then add to beef and mix thoroughly.

4. Blend the water and the 1 tablespoon of cornstarch to a paste. Drain the soaked black beans. Mince the garlic and mash with the beans.

5. Heat 1 ½ tablespoons of cooking oil. Add the remaining salt, then beef. Stir-fry for 2 minutes or until the beef is brown and remove from pan.

6. Heat remaining 1 ½ tablespoons of cooking oil. Add the black bean mixture and stir-fry a few times. Add the bitter melon and stir-fry for about 1 minute to heat and coat with oil.

7. Stir in the stock and heat quickly. Cook, covered, for 2 minutes, over medium heat.

8. Put the beef back into the pan and stir-fry gently to reheat and blend flavors. Stir in the cornstarch paste to thicken the sauce and thats it! I highly recommend serving this with a side or rice.  Enjoy.
