House Special Oven Roasted Mash Potatoes

You can make this easy to make dish with any kind of potato. Mash potatoes make a wonderful compliment for almost any meal so keep this recipe handy. In addition, it’s a great comfort food dish! I personally recommend serving this with some prime rib, roast beef or oven fried chicken.

Ingredients:

2 lbs of red potatoes
1 1/2 tbsp smart balance butter
1/4 cup Blue Diamond’s almond breeze milk
1 small bunch of cilantro
1 small bunch of scallions
1/2 tsp sea salt
1/2 tsp black pepper
1 1/2 tbsp of hot dried scallop

Directions:

1. Preheat oven to 350F. Wash and cut up potato with the skin on. (helps with cooking faster and easier mashing)

2. Fill pot with water and boil potato in water for 20-25 minutes or until tender.

3. Drain and mash. Add in Smart Balance butter, almond milk, sea salt, black pepper, scallions and cilantro and mix thoroughly.

4. Lightly grease with butter a casserole dish. The spoon potato into prepared casserole dish.

5. Bake casserole uncovered in the preheated oven for 30 to 35 minutes or until heated thoroughly.  Serve with bacon bits if desired and a little bit of shredded cheese of your choice.   Enjoy!
