Homemade Mozzarella Stuffed Pesto Turkey Meatballs

I tend to sometimes cook out of convenience at times.  However there is no replacement for making food from scratch when done right.  There is no exception here with these mozzarella stuffed pesto turkey meatballs.  Sure I’ve shown off pre-made meatballs in the past but if you have time to make these meatballs, I highly recommend you do.  They come out moist and filled with a delicious cheesy surprise that will compliment well with any sauce you toss them with.  Plus they make a great option for meatball heroes as well.

Ingredients:

1 lb of ground turkey

1 onion chopped finely

1 egg

5 cloves garlic chopped

1/4 cup Parmigiano-Reggiano cheese grated

1/2 cup Italian bread crumbs

1/4 cup Pesto

1 bunch of cilantro chopped

1/4 cup milk

2 tsp black pepper

1 tsp sea salt

1 lb fresh mozzarella cut into cubes

4 tbsp extra virgin olive oil

Directions:

1. Preheat oven to 375F.

2. In a bowl, mix ground turkey, chopped onion, minced garlic, egg, breadcrumbs, cheese, pesto, chopped parsley, milk, salt and pepper. Mix thoroughly until combined.

3. Form ground turkey mixture into meatballs about 1 3/4 inch in diameter and stuff a mozzarella cube into each meatball and seal the meat around the cheese.

4. Put the meatballs on a nonstick baking sheet and oil with olive oil.  Bake meatballs for about 30 minutes and serve accordingly with your desired pasta of choice.  Enjoy!
