Awesome Moroccan Chicken Kebab recipe courtesy of (Maggie)

If you’re cooking for loads of friends or for a party, this recipe will be a hit! They are so easy to make and delicious. Marinated in blends of spices, they can be grilled, char grilled or cooked on the Barbie. The delicious yogurt based marinade keeps the chicken moist and juice when cooking on the grill.  This recipe was shared by my friend Maggie, so I thank you for this excellent recipe! I will be making this again for sure and hope you all give this a try and let me know how this turns out for you.

Ingredients:

1/4 cup nonfat plain yogurt

1/4 cup chopped fresh parsley

2 tablespoons lemon juice

1 tablespoon extra-virgin olive oil

4 cloves garlic, minced

1 1/2 teaspoons paprika

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

1/8 teaspoon cayenne pepper (add more if you want it a little spicy)

1 pound boneless, skinless chicken breasts, trimmed of fat and cut into 1-inch pieces

Directions:
1. Stir together yogurt, parsley, c lemon juice, oil, garlic, paprika, cumin, salt, pepper and cayenne in a medium bowl.
2. Add chicken and toss to coat well. Cover with plastic wrap and marinate in the refrigerator overnight.

3. Cook chicken on grill or broiler.
You can put the chicken on skewers and serve with any vegetables you like. Enjoy!
