Boiled Chicken(Chinese style) & dipping sauce

This method of cooking chicken may seem unusual to you but trust me, once you try this dish you will never go back to boiling all the flavor out of the out of those boneless chicken breast fillet (the kind that ends up tasting bland and rubbery). This is by far the easiest chicken dish to make ever and you’ll use the whole chicken, not just the breasts meat.  Plus you can use the meat for salads, soups and sandwiches  too.

Ingredients:

3-4 lb whole chicken

3 cloves fresh garlic

3 strands of cilantro chopped

1 shallot chopped

2 strands of green scallions chopped

4-5 tbsp extra virgin olive oil

4-5 tbsp oyster sauce

2/3 full of water stockpot

Directions:

1. You will need to fill a stock pot with 2/3 full of water and let it come to a full boil.

2. Boil water, put whole cleaned bird into pot, bring back to boil for 2 minutes.

3. Cover and turn off the heat. Leave everything as is and return in 1 hour. The chicken will be cooked, flavorful, and moist.

4. Remove from water and let cool. Use meat according to your recipes.

Create the Dipping Sauce:

1. In a small bowl combine the oyster sauce, scallions, cilantro together and set aside for later.

2. In a small pan, heat up some extra virgin olive oil and throw in some 3 smashed cloves of garlic into the oil.  Heat oil until garlic is golden brown. Remove the smashed garlic out of oil.

3.  Add shallots and chopped garlic into oil and simmer for about a minute.  Then pour into bowl with the rest of the combined ingredients from earlier. Mix everything together while its hot and serve dipping sauce along with chicken.

This chicken is traditionally served along side with rice and a side of vegetables.  Enjoy.
