Cheese topped crispy baked chicken

A quick, delicious, simply good tasting chicken!  I got off work one night and was just exhausted but whipped up this meal I wanted to share with you all.  I wanted something fried but this served its purpose equally well for me.  I hope you all find it as satisfying.

Ingredients:

2 chicken breast fillet halved (4 individual pieces)

1/3 cup of Italian breadcrumbs

1/3 cup of whole wheat panko breadcrumbs from Ians

1/4 cup Parmesan cheese

2 eggs whites or whole egg equivalent

1/3 cup of white whole wheat flour or all purpose flour

Directions:

1. Mix italian breadcrumbs with whole wheat pano breadcrumbs and parmesan cheese together on a dish.

2. Put whole wheat flour on another dish.

3. Put egg white on a separate dish.

4. Take each chicken breast and dip it in the flour, egg and breadcrumb mixture.

5. Put chicken on a greased baking sheet and bake for 350 degrees for 35-40 minutes depending on the thickness of the chicken breast. During the last 2-5 minutes, sprinkle on extra cheese of your choice and serve with pasta or rice of your choosing. Enjoy!
